Is there any method to play as 'unknown' (Final boss) in Tekken Tag ??? ..

Not possible on the arcade version unfortunately, all you'll get is a Namco BSOD if you select her in-game, or even in the demo CPU fights. Must be some additional code when she does appear on the final stage (note, she also has no tag partner, could be an interesting cheat if possible to do).
I made cheats for this a couple of years ago (of course, they're in the .dat format though)...

If you want to see Unknown in action, poke 354088 with 0x21; however, all you'll get is a crash after about 1 frame of the loading screen, even if you only selected the character model itself.

Adding the following to the current "<cheat desc="Select First Character PL1">" cheat in the tektagt xmls seems to work fine...no crashes

Hmm, OK... sometimes it works, others not.
During the 'partially emulated' Tekken Tag days it crashed every time (probably just the emulation at the time, and lack thereof); it also crashed instantly just now when trying it on 0.131, but I ran MAME again straight after and it actually worked until stage 3 where it blue-screened again. Reminds me of playing as the Tekken Force guys on Tekken 3 PSX - it either works or crashes at random.
Differences between the arcade and PS2 selectable Unknown:
You also get Unknown's regenerating health and less damage, and can only be killed when the dark red vanishes.
You can tag out to the 'second' Unknown, however you share the same health bar (the CPU never tags out with Unknown).
Unknown seems to be stuck in her default Jun stance, and not one button does anything to change this (I thought they would 'cheat' and use the hidden button 6, but no...).
Unknown can only be selected with the player 1 costume, other buttons seem to crash the game.
Now for the hard part, she's staying in her default Jun stance, where the CPU player can change moves at random - as mentioned before, the PS2 version has this feature mapped to R3, but there is seemingly no actual button mapping. Must be some way of getting her to change randomly, as the four main buttons, tag, the hidden button 6 and start don't do anything of the sort. Strangely, you can tag out with her (which the CPU never does on the final stage), but as Unknown is 'one' character, she only runs out and back in again with the same health bar. Good for evading moves though! Even more strangely, when 'tagging' in, Jun's moves are still used, unless Unknown doesn't actually disappear off-screen and change like normal fighters.
